Beckoning Spring: THE BEST Raspberry Lemonade

I gave a sneak peek of this recipe a couple weeks ago when I hosted a giveaway for Polder’s Old World Kitchen Utensils, and today is the day I share with you THE BEST Raspberry Lemonade!! I decided to start with fresh, simple ingredients, make enough for one person, then multiply it for a larger serving!

For one serving, you will need:

the juice from 1 1/2 lemons

2 fresh raspberries, smashed

1 cup cold water

4 Tablespoons sugar

This recipe is the perfect amount of tartness and sweetness (without being too sweet). I’ve read some recipes that say to make a simple syrup or make a lemonade syrup, but that is too much prep work and things to remember, in my opinion. For this, you just combine all the ingredients, stir, let sit for about 10 minutes, then stir again (sugar dissolves at that point).

I think this lemonade tastes best served over lots of ice, because it starts out pretty tart, and as the ice melts, it tastes even better! No need to make “lemonade ice cubes” ahead of time or any of that bologna to keep it from being watery!

The fresh bits of raspberry reminds me of the raspberry lemonade served at a fancy restaurant I went a couple years ago. If you want to make this a little more festive, just substitute sparkling water with the regular water, and this would be perfect for a spring get-together with your girlfriends!

I think I drank the whole pitcher by myself when I made these the other day! They are SO addicting and FULL of vitamin C, which is perfect to boost your immunity, while beckoning spring to come a little early…. pretty please??

THE BEST Raspberry Lemonade

Ingredients

  • For 1 Serving:
  • Juice from 1 1/2 lemons
  • 2 fresh raspberries, smashed
  • 4 T. sugar
  • 1 c. water
  • Ice
  • For 4 Servings:
  • Juice from 6 lemons (just shy of 1 cup)
  • 8 fresh raspberries, mashed
  • 4 c. water
  • 1 c. sugar
  • Ice

Instructions

  1. Mix water and sugar together first, add lemon juice, then the mashed raspberries last. Let sit for 10 minutes, then stir. Serve over lots of ice!

    YUM! This looks so delicious! And you’re right – they would go quite perfectly with coconut raspberry lemon bars 🙂 Let’s have a garden party. Like in July when all the snow melts here 😉
